Weekly eating

The struggle is real.  Between working and them finding time to eat some thing other than takeout pizza, do my physical therapy, spend time with the baby and the husband it is seriously hard to fit it all in. Oh and sleep.  The older I get, the more sleep becomes non negotiable. We are also trying to eat with McKenna so she sees us eat and follows suit. It also allows me to give her things off my plate, which she definitely is more interested by.  This has actually been a huge struggle as our window in the evening is so limited with her, I don't want to spend it cooking and not spending time with her.  So the goal is to keep our meals simple and do as much ahead of time as possible. The downside to this is the Husband and I usually spend time chatting and relaxing during our meals as it’s always been our alone time together. But sleep. So I came up with a plan for the week and cooked the majority of our food on Sunday.  I really only made salsa because my freezer was starting to fill out and we have been making tacos but have had to buy salsa.  As a New Mexican, I'm embarrassed that I bought salsa.  Below is was our plan for the week.

Breakfast of eggs, chicken sausage, peppers and onions


 It was actually going great until Chris got his appendix out on Wednesday. Actually, I’m even more happy that I had everything cooked because who knows what we would have ended up eating the rest of the week.  Things did get rearranged a bit.  Salmon got pushed to Friday night and I basically ate BBQ chicken all week.  Normally I would have more variety but after I had put all the chicken in to marinade the BBQ sauce, the Husband asked if it had sugar in it.  Which it did, so he didn't eat any and why we ate two different meals this week.  I would normally never do separate meals.  I did make separate food for Chris Thursday when he came home, since he did have surgery on this stomach I suppose he gets a pass.

Lessons learned for this week.  1) Double check with the husband that he needs breakfast.  He decided he was not eating breakfast this week but I made enough breakfast for both of us for the whole week.  2) Check with the husband on things he is not eating this week.  Every weekend we discuss our schedules for the week.  It helps us be on the same page for how we are getting through the week but also helps me plan out how much food to make.  The goal is to have 2-3 meals leftover by Friday night, which usually end up being lunches or snacks during the weekend.  Then we can have a slightly more elaborate dinner or go out during the weekend.

This weeks plan changed slightly Sunday morning when I went to the garage and found I didn't shut the freezer door all the way. Fortunately, it was cool enough that nothing had defrosted fully but the freezer and all the food in it was a giant icicle.  I got the muffins made and then moved as much as I could to the freezer inside and the most frozen pieces stayed in a cooler in the garage.  Fortunately, one side of our freezer inside was mostly open because that's where I store the baby's bottles that I make on Sunday.  I am a weirdo and don't feed my kid commercial formula.  Chris and I drink milk from a farmer which we love.  As it got closer to time to add in formula, I felt the baby should get the same awesome milk we do.  I follow the recipe from the Weston Price website and its been great.  We didn't have any issues getting her to drink it and only had one day of constipation when we added it in with the breast milk.  The down side is, its a not as simple as putting some water in some powder.  I am also dealing with very fresh ingredients that can spoil easily.  To avoid waste and simplify my life, I have started making 3 1.5 (its what fits in the Vitamix) batches on Sundays and freezing it.  Now all i have to do is remember to take them out of the freezer, which usually happens.



As I was scrambling to find space for everything, I was also starting to wonder "WTF is this and why is it in my freezer."  I have a bad habit of throwing things in there and not properly labeling them.  Everything looks the same with icicles on it.  A few things went to the fridge, one of which is Thai chicken I had made and froze the leftovers.  The other was leftover turkey bones and legs from Thanksgiving.  I had the intentions of making enchiladas with it but really didn't want all the corn tortillas so I have been putting it off.  I threw the turkey bones into a stock pot and got them boiling.  They cooked for most of the day so the meat fell off the bone and apart.  We decided to toss in some heavy cream, green chile, celery, onions and carrots.  Hindsight, I wish I had put more carrots in it but it was still good.  And spicy!  It only had 6 chile's but you definitely couldn't slurp it.  Everything is prepped and the fridge is full, so we are ready to start the week.  Hoping for a slightly less crazy week.  Below is this weeks menu and I will post next weekend about how it went.

So I have thought about this for a while.  Do I actually write this post?  Do I put my dirty laundry out there for everyone? Or the handful that read my blog.  And if I do, what do I say? Do I slam those involved?  Do I take the high road?  When is a “good” time to put it out there?  A few days under my belt and there is probably no better time. So no secret, my ex-boyfriend was my coach.  That worked out mildly well while we were together but add a breakup and somehow it just doesn’t work out as smoothly.  Add a few of the worst things a person could do to another in there and disaster doesn’t even begin to describe.  But I have this eternal belief that I can make any situation work.  That I can fix things.  It’s what makes me good at my job.  I’m an eternal optimist. But it’s what causes me to not be so good at my personal life.  Even when things are clearly not good, I still think I can fix it and make it right...

Skipped a week to savor the end of my maternity leave

So I skipped week 11.  Mostly because I was in tears about having to leave McKenna and go back to work.  Mom guilt is a real thing.  It also makes me very angry about the maternity leave policy in this country.  It wasn’t something I honestly paid attention to before.  Maybe because I wasn’t planning on being a mom for a long time. Or probably because I assumed that is just a benefit you give people.  Now I am learning, we are about as good as a third world country.  We don’t even give government employees a maternity benefit.  No surprise that private companies wouldn’t feel obligated to provide that.   My time home with McKenna has been amazing.  I know so much about her, , her likes, her preferences, her behaviors and her routine.  We have had the benefit of setting our own schedule.  I don’t have to rush out in the morning.  I didn’t have to stress about pumping right away.  I have gotten to experience so much ...

Dad's Salsa

My Dad makes the best salsa.  I grew up in New Mexico.  We are a bit picky about our salsa.  It is hands down my favorite.  And not just because he is my Dad.  Its actually brilliant in in its simplicity.  The ingredients are: Green Chiles Onions Canned diced tomatoes (petite if you ask his opinion) Cumin Salt Olive oil (for cooking the onions The important thing is to start with good roasted chile's.  The roasting is what gives them their flavor and allows the skin to blister and peel off.  I was lazy when I put up my chile the last time and just bagged everything with the skin on.  It actually tends to be a little easier to get the skin off once its been frozen.  For this batch I used 2 quart bags frozen chile's, 6 - 14.5 oz cans of diced tomatoes, 2 onions and seasonings to taste.   First step is to clean the chile's and chop them.  I could probably normally tolerate the chile's but now I have a little perso...
